HAPPY BIRTHDAY KEITH!

Happy Birthday to My Wonderful Husband!
Every since he was a baby, Keith has made his parents proud.
Keith has always had a great love for life.
Here's Keith and his sister, Jenny, celebrating their April birthday's at dinner last Sunday.
Last night we went to the Diamondbacks game. They beat the Padres! They even had a firework show after the game. Thanks to Mom and Dad Jackson for taking all of us. What a great way to start a fun weekend of celebrating Keith's birthday!

Welcome Baby Aubry!

Yesterday my brother and his wife welcomed their new baby girl into the world. We went to see her this evening. She is so adorable! As the 4th child in their family she'll have lots of siblings to learn knew things from. Congratulations Phil and Leila!

Auntie Ann was there too!


Strawberry Avocado Salad with Sugared Almonds

Okay, so doesn't spring time just get you in the mood for yummy foods that are light and sweet? It does for me! This salad is the best! Every time I make it everybody raves and IT'S SO EASY! You just start with a bowl of green lettuce. Slice a bunch of strawberries and put them around the edges. Then cut up a lot of avocados into bite sized pieces and put them in the middle. Now is the fun part; the sugared almonds. Make them a little bit ahead of time so they can cool off. Put 1/3 - 1/2 cup sugar per 1 cup of slivered almonds into a pan on medium heat. Stir them around until the sugar starts to melt and then really stir them good until the sugar coats the almonds and they turn to a nice golden color. Spread them out on waxed paper to let them cool. Then sprinkle them around the edges of the salad. For the salad dressing, use Ken's Raspberry Walnut Dressing. Note that it is the "dressing" not the "vinaigrette." The vinaigrette is to runny and just falls off the salad. Let me know if you try it.

TEN YEARS AGO I WAS...Finishing my Junior year at Mountain View High School. I would have just gone to the Sadie Hawkins dance a couple weeks earlier. Shortly after I was on swim team during the summer at Poston Jr. High's pool.
