Strawberry Avocado Salad with Sugared Almonds

Okay, so doesn't spring time just get you in the mood for yummy foods that are light and sweet? It does for me! This salad is the best! Every time I make it everybody raves and IT'S SO EASY! You just start with a bowl of green lettuce. Slice a bunch of strawberries and put them around the edges. Then cut up a lot of avocados into bite sized pieces and put them in the middle. Now is the fun part; the sugared almonds. Make them a little bit ahead of time so they can cool off. Put 1/3 - 1/2 cup sugar per 1 cup of slivered almonds into a pan on medium heat. Stir them around until the sugar starts to melt and then really stir them good until the sugar coats the almonds and they turn to a nice golden color. Spread them out on waxed paper to let them cool. Then sprinkle them around the edges of the salad. For the salad dressing, use Ken's Raspberry Walnut Dressing. Note that it is the "dressing" not the "vinaigrette." The vinaigrette is to runny and just falls off the salad. Let me know if you try it.
