Here's Keith and his sister, Jenny, celebrating their April birthday's at dinner last Sunday.
Last night we went to the Diamondbacks game. They beat the Padres! They even had a firework show after the game. Thanks to Mom and Dad Jackson for taking all of us. What a great way to start a fun weekend of celebrating Keith's birthday!

Okay, so doesn't spring time just get you in the mood for yummy foods that are light and sweet? It does for me! This salad is the best! Every time I make it everybody raves and IT'S SO EASY! You just start with a bowl of green lettuce. Slice a bunch of strawberries and put them around the edges. Then cut up a lot of avocados into bite sized pieces and put them in the middle. Now is the fun part; the sugared almonds. Make them a little bit ahead of time so they can cool off. Put 1/3 - 1/2 cup sugar per 1 cup of slivered almonds into a pan on medium heat. Stir them around until the sugar starts to melt and then really stir them good until the sugar coats the almonds and they turn to a nice golden color. Spread them out on waxed paper to let them cool. Then sprinkle them around the edges of the salad. For the salad dressing, use Ken's Raspberry Walnut Dressing. Note that it is the "dressing" not the "vinaigrette." On Friday night we were invited by our friends Shari & Rich to the symphony to see "The Piano Men." It was the music of Elton John and Billy Joel. Jim Witter and his band were accompanied by the Phoenix Symphony. Jim Witter sang all the songs (and sounded a lot like Elton John), while facts and trivia from the 70's was projected onto a screen behind them. 
As we were sitting there peacefully we noticed something else moving in the water. I could have sworn it was an alligator (despite the fact that we don't get those here). I figured someone had a baby alligator and let it go in the water. (That's possible, right?) All we could see was this dark green lumpy round thing coming up slowly, just like an alligator does while it's waiting to get it's prey. It seriously looked like the eye or tip of the head of an alligator!!! Keith went closer to check it out as I stood on the bench. Then suddenly it came to the surface. It was a really cute turtle! And it liked to eat the bread! What a relief! :)
Here's the turtle swimming next to the swan. There was at least one other turtle out there also.
